Hi, I am Roxanne!

I am a nutritionist, geneticist and ... traveller. My work includes researching the interconnection between consuming particular types of food and mental health while exploring new places. 

​I’ve lived in Sri Lanka as a digital nomad for 10 month, which influenced a lot the way I see the world, people, priorities and of course - mental health and nutrition. So you might expect a lot of nutrition advice for working travellers 😉


I’ve always loved food: loved cooking, eating, talking about food or just spending time at fancy little restaurants. When I started university, I desperately tried to find my place and my people… whatever it takes.

That is why, my own story with healthy eating started with an eating disorder. To be precise, with a summer 2013, which I spent in a company of buckwheat and a cottage cheese. I starved myself and I thought that finally, for the first time in my life, I’ve had everything under control.

I began excessively exercising and obsessively counting calories. Add to that OCD and, eventually, I developed anorexia. I thought I’ve been perfectly organising my life in order to deal with stress, but instead, I’ve created even more chaos. I’ve been feeding my negative thoughts, feelings, and impulses instead of looking for the root cause of a problem.

It's been 9 years and I'm slowly learning to live without my eating disorder. From time to time I also struggle with choosing food which is right for me. I skip meals when I’m upset, and binge eat sweets when I am excited. And you know what? It’s okay! From time to time, it happens to everyone.

The nitty-gritty about me...

​I have a MS in Medical Genetics as well as Life Style Coaching.

I used to work as a science consultant designing research plans in molecular biology.

Former passenger service agent here who is extremely passionate about aviation.

My other interests include 50th fashion, retro cars, baby chicks, wild nature, fantasy movies, animation and chocolate cakes.

Favourite foods: peanut butter toasts, brownie, persimmon, cottage cheese with an apricot jam, roasted vegetables.

Comfort food isn’t about loosing control over eating. Sometimes it’s about gaining control over difficult emotions.

Delicious toast with a peanut butter and a jam

The buttered toast tends to land on the floor butter-side-down. What about the peanut butter toast? The answer is still "yes", as there's nothing to do with a butter or a bread. Of course, we can't impact the laws of nature aka physics. However, what we can alter, is what your toast is made from. Replace white bread with the whole wheat one, add some berries, use peanut or almond butter ... and you have a balanced meal, which consists of protein, carbohydrates, fat and fruits. Not a fan of a peanut butter? No problem! There are many nutritious high-fat foods to choose from, like chia seed or coconut butter. You can eat regular butter, there is nothing "unhealthy" or wrong with it . 

While you are making another toast (from ingredients you actually enjoy!), here is one thing about the Nut Butter Phenomenon. Peanut butter toast with jam is definetely among the most popular comfort foods in the world. What is more, it is very nutrient-dense. 

Usually "food for mood" considered to be high in fat, sugar and doesn't have a lot of nutritional value. It doesn't have to be true. You can still eat your special chocolate cake – without gaining weight, without any guilt, with a healthy eating basics instead. You can still have the "peanut butter days" and be well-nourished. That is what the Nut Butter Phenomenon is all about!
